Ingredients
- 1 lb boneless chicken thighs, cut into 2-inch pieces
- 8 cloves garlic cloves, minced
- 2 tbsp fish sauce
- 1 whole lime
- 3 tbsp neutral cooking oil
- 2 whole dried chilies, optional
Instructions

Pat chicken dry with paper towels. Season with salt and black pepper.

Heat 2 tbsp oil in a large skillet over medium-high until shimmering, about 90 seconds.

Add chicken in a single layer. Fry without stirring for 4 minutes until golden on the bottom.

Stir and cook another 4 minutes until chicken is cooked through and edges are crispy.

Push chicken to the side. Add remaining 1 tbsp oil and minced garlic (and dried chilies if using). Fry 60 seconds until garlic is golden and fragrant.

Toss chicken with garlic. Drizzle fish sauce and juice from half the lime. Squeeze remaining lime over top and serve hot.
