Ingredients
- 4 pieces chicken thighs, skin-on and bone-in
- 3 tbsp fish sauce
- 6 cloves garlic, minced
- 1 whole lime
- 3 pieces scallions, chopped
- 1 tbsp white sugar
- ¼ cup chicken broth

Pat chicken thighs dry and season generously with salt and black pepper on both sides.

Heat oil in a 12-inch skillet over medium-high until shimmering. Place chicken skin-side down and sear without moving for 6 minutes until skin is golden and crispy.

Flip chicken and sear the other side for 4 minutes until cooked through. Transfer to a plate.

Pour off excess fat, leaving 1 tbsp. Add garlic and cook 30 seconds until fragrant, then add fish sauce, sugar, and broth.

Return chicken to the skillet and turn to coat in glaze. Simmer for 2 minutes until sauce thickens and clings to the chicken.
