Ingredients
- 1 fish (1.5 lbs) whole sea bass or snapper, cleaned and scaled
- 6 cloves garlic, minced
- 3 tbsp soy sauce
- 1 whole (juiced) lime
- 1 tbsp fish sauce
- ¼ cup all-purpose flour
- 2 stalks scallion, sliced thin

Pat the fish dry inside and out. Season generously with salt and pepper.

Toss the fish in flour to coat all over, shaking off excess.

Heat 3 tbsp oil in a skillet over medium-high until shimmering. Slide the fish in and fry 6 minutes per side without moving, until skin is deep golden and crispy.

Transfer fish to a plate. In the same skillet, cook garlic over medium for 45 seconds until fragrant, stirring constantly.

Remove from heat. Stir in soy sauce, fish sauce, and lime juice.
