Ingredients

  • 1 cup cassava flour
  • 2 tbsp butter
  • ½ medium onion
  • ½ tsp salt
  • ¼ cup bacon bits

Instructions

  1. 1

Melt the 2 tbsp butter in a skillet over medium heat. Add the 1/2 sliced onion and cook until soft and translucent, about 3 minutes.

  2. 2

Add the 1/4 cup bacon bits and cook until they start to crisp, about 2 minutes.

  3. 3

Add the 1 cup cassava flour and 1/2 tsp salt. Stir constantly to coat the flour with the butter mixture.

  4. 4

Toast the farofa, stirring often, until it turns golden and smells nutty, about 5-7 minutes. It should be dry and crunchy, not clumpy.

  5. 5

Remove from heat and let cool slightly. Serve warm or at room temperature as a crunchy topping.
