- 2 large eggs
- ½ whole avocado
- 1 slice cheddar or Swiss cheese
- 1 tbsp butter
- 1 pinch each flake salt and black pepper

Slice the bagel in half lengthwise. Toast both halves in a toaster or toaster oven until golden brown, about 3 minutes.

While bagel toasts, slice avocado in half, remove the pit, and scoop the flesh onto a cutting board. Mash with a fork until spreadable but still chunky.

Heat butter in a small skillet over medium-high heat until it foams and smells nutty, about 60 seconds.

Crack both eggs into the skillet. Fry without moving for 2–3 minutes until whites are set but yolks still jiggle. Edges should look crispy and browned.
