Ingredients

  • ¾ cup cornmeal
  • ¼ cup all-purpose flour
  • 1.5 tsp cajun seasoning
  • 2 medium tomatoes, sliced
  • 2 cups lettuce, chopped

    Cut catfish into 2-inch nuggets. Mix cornmeal, flour, cajun seasoning, salt, and pepper in a shallow bowl.

    Pat catfish nuggets dry with paper towels. Coat each piece thoroughly in the cornmeal mixture.

    Heat 0.5 inch of neutral oil in a 10-inch skillet over medium-high until it shimmers, about 2 minutes.

    Working in batches, fry nuggets until golden brown and crispy, 2–3 minutes per side. Don't crowd the pan.

    Transfer cooked nuggets to a paper-towel-lined plate. Season lightly with salt while hot.
