Ingredients
- 12 oz canned conch, drained and chopped fine
- 1 cup all-purpose flour
- ½ cup red bell pepper, minced
- ⅓ cup scallions, chopped
- 1 whole habanero or scotch bonnet chile, minced
- 1 whole lime
- 1 quart neutral cooking oil for frying

Whisk flour, 1 tsp baking powder, 0.5 tsp salt, and 0.25 tsp black pepper in a bowl.

Fold conch, bell pepper, scallions, habanero, lime juice, and 0.5 cup water into flour until just combined.

Heat oil in a heavy pot to 350°F (use a thermometer). Working in batches, drop golf-ball-sized spoonfuls of batter into oil.

Fry 2 to 3 minutes per side until deep golden brown and floating, then lift out with a slotted spoon.
