Ingredients
- 1 lb ground conch
- 1 cup all-purpose flour
- ½ medium red bell pepper
- 3 stalks green onions
- 1 tbsp thyme
- ¼ tsp cayenne pepper
- 2 large eggs
- 1 whole lime (juiced)
- 1 to taste salt and black pepper
- 2 quarts vegetable oil for frying
- ¾ cup mayonnaise for aioli

Dice red bell pepper and green onions into 1/4-inch pieces.

In a large bowl, whisk together eggs, lime juice, salt, and black pepper.

Add conch, bell pepper, green onions, flour, thyme, and cayenne to the bowl.

Fold gently until just combined — batter should be thick and chunky.

In a small bowl, stir together mayonnaise and 1 tbsp lime juice for aioli.

Heat oil in a deep skillet to 350°F. Test heat with a tiny batter drop.

Working in batches, drop batter by heaping tablespoons into oil.

Fry 2 minutes per side until deep golden brown and crispy outside.
