Ingredients

  • 1 cup water
  • 4 tbsp butter
  • 1 cup all-purpose flour
  • ¼ cup granulated sugar
  • 1.5 tsp ground cinnamon
  • 6 oz dark chocolate, chopped
  • 1 cup whole milk
  • 2 cups neutral oil for frying

Instructions

    Heat water and butter in a saucepan over medium until butter melts. Remove from heat and stir in flour until a thick dough forms.

    Mix sugar and cinnamon in a shallow bowl. Set aside.

    Heat oil in a heavy skillet to 350°F. Transfer dough to a piping bag fitted with a large star tip.

    Pipe 4-inch lengths of dough into hot oil. Fry 90 seconds per side until deep golden, then transfer to a paper towel.

    While still warm, dip each churro in cinnamon sugar, coating all sides generously.

    Heat milk in a saucepan over medium-low. Add chopped chocolate and whisk until smooth and glossy, about 2 minutes.
