Ingredients
- 1 cup water
- 4 tbsp butter
- 1 cup all-purpose flour
- ¼ cup granulated sugar
- 1.5 tsp ground cinnamon
- 6 oz dark chocolate, chopped
- 1 cup whole milk
- 2 cups neutral oil for frying

Heat water and butter in a saucepan over medium until butter melts. Remove from heat and stir in flour until a thick dough forms.

Mix sugar and cinnamon in a shallow bowl. Set aside.

Heat oil in a heavy skillet to 350°F. Transfer dough to a piping bag fitted with a large star tip.

Pipe 4-inch lengths of dough into hot oil. Fry 90 seconds per side until deep golden, then transfer to a paper towel.
