Ingredients

  • 2 cups cooked chicken, shredded
  • 12 count flour tortillas (6-inch)
  • 1 cup sharp cheddar cheese, shredded
  • ½ cup sour cream
  • 1 count lime (juiced + zested)
  • 1 tsp cumin
  • 1 count jalapeño, minced
  • 2 cups vegetable oil for frying
  • 1 to taste salt and pepper to taste

Instructions

    Mix shredded chicken, cheddar, cumin, jalapeño, and a pinch of salt in a bowl.

    Combine sour cream, lime juice, lime zest, and 1/4 tsp salt in a small bowl. Stir until smooth.

    Warm tortillas in the microwave (wrapped in a damp towel, 45 seconds) until pliable.

    Lay a warm tortilla flat. Spoon 2-3 tablespoons filling down the center; roll tightly and place seam-side down.

    Repeat with remaining tortillas and filling. Arrange taquitos on a plate seam-side down.

    Heat oil in a large skillet to 350°F (or until a tortilla edge sizzles immediately on contact).

    Working in two batches, fry taquitos seam-side first for 45 seconds, then roll to fry all sides until golden, ~2 minutes total.
