Ingredients

  • ¾ lb boneless, skinless chicken breasts
  • ½ cup all-purpose flour
  • 1.5 tsp garam masala
  • ½ cup mayonnaise
  • ¼ cup fresh mint leaves
  • 1 cup cherry tomatoes

    Cut chicken into 1.5-inch bite-size pieces. Pat dry with paper towels.

    Mix flour, garam masala, 1 tsp salt, and 0.5 tsp black pepper in a shallow bowl.

    Toss chicken pieces in the flour mixture until fully coated.

    Heat 1.5 inches oil in a heavy skillet over medium-high to 350°F, ~4 minutes.

    Fry chicken in two batches, 3–4 minutes per batch, until golden brown and edges are crispy.
