Ingredients

  • 1 lb boneless, skinless chicken breasts
  • ¾ cup gram flour (besan)
  • 1 tbsp ginger-garlic paste
  • 1 whole green chili, minced
  • 2 cups neutral oil for frying
  • ½ cup lettuce leaves

Instructions

  1. 1

Cut chicken breasts into 1-inch cubes. Pat dry with paper towels.

  2. 2

Mix gram flour, ginger-garlic paste, green chili, 1/4 tsp salt, and 1/2 tsp black pepper in a bowl. Add 1/4 cup water slowly until batter coats chicken thickly.

  3. 3

Toss chicken cubes in the batter until fully coated on all sides.

  4. 4

Heat oil in a deep skillet to 350°F (or until a test cube floats and sizzles immediately).

  5. 5

Carefully drop battered chicken pieces into hot oil in batches. Fry 3–4 minutes until deep golden brown and crispy, turning halfway.

  6. 6

Transfer to a paper towel-lined plate. Serve warm over fresh lettuce with lemon wedges and salt to taste.
