Ingredients
- ½ lb ground beef
- 4 count corn tortillas
- 1 cup oaxaca cheese or mozzarella, shredded
- 1 count lime
- ½ tsp cumin
- ½ tsp chili powder
- ½ cup salsa (fresh or jarred)
- 2 tbsp cilantro, chopped

Heat oil in a large skillet over medium-high. Brown ground beef, breaking it apart as it cooks, until no pink remains, about 5 minutes.

Stir in cumin, chili powder, salt, and pepper. Cook 30 seconds until fragrant, then slide the beef to the side of the skillet.

Lay a tortilla flat on the empty side of the skillet. Sprinkle a quarter of the cheese in the center, then fold the tortilla in half.

Let it sear 90 seconds per side until the tortilla is golden and the cheese melts and browns slightly at the edges.

Transfer to a plate. Repeat with the remaining tortillas and cheese, dividing the cooked beef among them as you fill.
