Ingredients
- 4 tbsp butter
- 200 g shredded phyllo dough (kataifi)
- 150 g white cheese (mozzarella or feta), shredded
- ½ cup honey
- ¼ cup water
- 3 tbsp pistachios, roughly chopped

Warm honey and water in a small saucepan until steaming, ~2 minutes. Remove from heat and set aside.

Melt 2 tbsp butter in a 10-inch skillet over medium heat. Toss half the phyllo with the butter until coated.

Press buttered phyllo into an even layer on the skillet bottom. Cook until golden and crispy, ~3 minutes.

Scatter shredded cheese evenly over the phyllo. Top with remaining phyllo, tossed with last 2 tbsp butter.

Cook until top layer is golden and crispy, ~3 minutes. The cheese should start oozing at the edges.

Carefully slide künefe onto a plate. Pour warm honey syrup over the top and scatter pistachios immediately.
