Ingredients

  • 8 sheets phyllo dough sheets
  • 1 cup feta cheese, crumbled
  • ½ cup ricotta or kashkaval cheese
  • 4 tbsp olive oil
  • 2 tbsp sesame seeds
  • ¼ tsp salt and pepper to taste

Instructions

    Mix feta and ricotta in a bowl with a pinch of salt and pepper until combined.

    Lay one phyllo sheet on a cutting board. Brush lightly with olive oil, then place another sheet on top and brush again.

    Cut the phyllo into 4 squares. Place 1 tbsp cheese filling in the center of each square.

    Fold each square into a triangle, pressing edges to seal. Repeat with remaining phyllo and filling.

    Heat 2 tbsp oil in a large skillet over medium-high heat. Working in batches, pan-fry triangles 2–3 minutes per side until golden and crispy.

    Sprinkle with sesame seeds and serve warm.
