Ingredients

  • ½ lb catfish fillets
  • 4 cups mixed salad greens
  • 1 whole lime (juiced and zested)
  • 1.5 tbsp fish sauce
  • 1 whole Thai red chili, minced
  • 2 tbsp olive oil

Instructions

    Pat catfish fillets dry with paper towels. Season both sides with salt and pepper.

    Whisk together lime juice, lime zest, fish sauce, and minced chili in a small bowl.

    Heat 1 tbsp oil in a large skillet over medium-high until it shimmers, about 90 seconds.

    Sear catfish 3–4 minutes per side without moving until golden and cooked through.

    Transfer to a plate and let rest 1 minute, then cut into bite-sized pieces.

    Toss greens with remaining 1 tbsp oil, then divide between two plates.
