Ingredients

  • 1.25 lbs cooked carnitas or pulled pork
  • 6 count radishes, thinly sliced
  • 3 tbsp white vinegar
  • 4 count green onions, chopped
  • 8 count flour tortillas (6-inch)
  • 1 count lime

Instructions

    Toss radishes with vinegar and a pinch of salt. Set aside to pickle while you cook.

    Heat oil in a large skillet over medium-high until it shimmers, about 1 minute.

    Add carnitas in a single layer. Don't stir for 3 minutes until the bottom edges turn golden and crispy.

    Toss the pork and cook 2 more minutes until edges are caramelized and some pieces look crunchy.

    Warm tortillas directly over a gas flame for 10 seconds per side, or wrap in foil and warm in a dry skillet.

    Fill tortillas with crispy pork, pickled radishes, and green onions. Squeeze lime over the top and serve.
