Ingredients

  • 1 lb squid, cleaned and sliced into 1/4-inch rings
  • ½ cup all-purpose flour
  • 2 cups neutral cooking oil for frying
  • 1 whole lemon
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

    Pat squid dry with paper towels. Season rings with salt and black pepper.

    Pour oil into a deep skillet. Heat to 350°F over medium-high heat, ~3 minutes.

    Toss squid rings in flour until coated. Shake off excess in a colander.

    Working in batches, slide squid into hot oil. Fry until golden, 90 seconds per batch.

    Transfer to paper towels to drain. Season with a pinch of salt while still warm.
