Ingredients

  • 4 oz crusty bread (ciabatta or similar), cubed
  • 1.5 cups cherry tomatoes, halved
  • ½ cup fresh basil, torn
  • 2 tbsp red wine vinegar
  • 3 tbsp olive oil
  • 1 clove garlic, minced

Instructions

    Toss bread cubes with 1 tbsp olive oil and a pinch of salt. Spread on a sheet pan and toast at 400°F for 5 minutes until golden and crispy.

    While bread toasts, whisk together red wine vinegar, remaining 2 tbsp olive oil, minced garlic, salt, and pepper in a large bowl.

    Add warm toasted bread, cherry tomatoes, and basil to the bowl.
