Ingredients

  • ¾ lb boudin sausage (or any smoked sausage), cut into 3-inch pieces
  • 16 count wonton wrappers
  • 2 cups neutral oil for frying
  • ½ cup mayonnaise
  • 2 tbsp sriracha or hot sauce
  • 1 tbsp fresh lemon juice

Instructions

    Whisk mayo, sriracha, and lemon juice together in a small bowl until smooth. Set aside.

    Place a boudin piece on a wonton wrapper at one corner. Roll tightly, then fold in the sides and seal with a dab of water.

    Heat oil in a heavy-bottomed pot or deep skillet to 350°F (or until a wooden spoon dipped in sizzles instantly).

    Working in batches, fry egg rolls 2–3 minutes until deep golden brown and crispy on all sides, turning once.

    Transfer to a paper towel–lined plate to drain.
