Ingredients

  • 3 medium ripe bananas
  • ½ cup rice flour
  • ¼ cup tapioca starch
  • ½ cup sparkling water or club soda
  • 2 cups neutral cooking oil for frying
  • ¼ cup sweetened condensed milk

Instructions

    Peel bananas and slice them diagonally into 0.5-inch-thick pieces.

    Whisk rice flour, tapioca starch, and a pinch of salt in a bowl until combined.

    Pour sparkling water into the flour mixture and stir until you have a thin, smooth batter with no lumps.

    Heat oil in a deep skillet to 350°F (175°C) — water flicked into the pan should sizzle immediately without smoking.

    Working in batches, dip banana slices into batter, tap off excess, and slide into hot oil. Fry 2–3 minutes per side until deep golden brown and edges curl slightly.
