Ingredients

  • 1.5 cups all-purpose flour
  • 1 medium potato, boiled and mashed
  • ½ cup frozen peas
  • 1 tsp cumin seeds
  • ½ tsp chili powder or red chili flakes
  • 1 cup neutral oil for frying

Instructions

    Mix flour with 0.5 tsp salt and 0.5 cup warm water until a soft dough forms, then knead for 2 minutes until smooth.

    Heat oil in a heavy-bottomed pot or deep skillet over medium-high until a tiny pinch of dough sizzles immediately.

    Mash peas into the potato with cumin, chili powder, and a pinch of salt — this is your filling.

    Pinch off a walnut-sized piece of dough, flatten, add 0.5 tsp filling, fold into a ball, and gently flatten into a disc.

    Slide the disc into oil — it will sink, then float and puff in 30-60 seconds, turning golden-brown.

    Flip once with a slotted spoon, fry the other side 15-20 seconds until crispy, then drain on paper towels.
