  • 3 tbsp sambal oelek (chili paste)
  • 2 tbsp soy sauce
  • 1 whole lime (juiced)
  • ½ cup all-purpose flour
  • 2 cups (cooked) steamed white rice
  • 1 cup crispy fried noodles (chow mein or instant ramen noodles, fried)
  • 1.5 cups total cucumber and tomato, sliced

Instructions

    Pat chicken thighs dry with paper towels. Mix sambal, soy sauce, and lime juice in a bowl.

    Coat chicken with sambal mixture, then dredge in flour until fully covered on all sides.

    Heat neutral oil in a 12-inch skillet over medium-high until it shimmers, about 90 seconds.

    Pan-fry chicken 6 minutes per side without moving until golden brown and cooked through.

    While chicken cooks, warm rice and prepare fresh cucumber-tomato salad on a plate.
