Ingredients

  • 8 pieces chicken thighs, bone-in skin-on
  • ¾ cup all-purpose flour
  • 1 tbsp turmeric powder
  • 4 cloves garlic, minced
  • 3 tbsp red chili paste (sambal oelek)
  • 2 tbsp lime juice
  • 3 cups steamed rice
  • 1 package fried tempeh, store-bought

Instructions

    Mix flour, turmeric, salt, and pepper in a bowl. Pat chicken dry, then coat each piece thoroughly with the flour mixture.

    Heat 1/4 inch of neutral oil in a 12-inch skillet over medium-high until it shimmers, about 90 seconds.

    Working in batches, fry chicken 6–7 minutes per side until deep golden and internal temperature hits 165°F. Transfer to a paper towel.

    Stir sambal, minced garlic, and lime juice in a small bowl to make the sambal sauce.

    Warm the steamed rice and fried tempeh in the same skillet over medium for 1 minute (or serve at room temperature).
