Ingredients
- 1 lb chicken thighs, boneless and skinless
- 3 whole red chilies, deseeded
- 4 whole garlic cloves
- 2 tbsp lime juice
- 6 oz fried tempeh
- 6 oz fried tofu
- 1 whole cucumber, sliced
- 2 cups cooked steamed white rice

Pound chicken thighs to even 1/2-inch thickness with a meat mallet or heavy skillet.

Crush red chilies and garlic in a mortar with a pinch of salt until rough paste forms.

Heat oil in a large skillet over medium-high until shimmering, about 1 minute.

Pan-fry chicken 4 minutes per side until golden brown and cooked through, no longer pink inside.

Transfer chicken to a plate, smash with the back of a spoon, and spread chili-garlic paste over the top.
