Ingredients

  • 1 lb chicken thighs, boneless and skinless
  • 3 whole red chilies, deseeded
  • 4 whole garlic cloves
  • 2 tbsp lime juice
  • 6 oz fried tempeh
  • 6 oz fried tofu
  • 1 whole cucumber, sliced
  • 2 cups cooked steamed white rice

Instructions

    Pound chicken thighs to even 1/2-inch thickness with a meat mallet or heavy skillet.

    Crush red chilies and garlic in a mortar with a pinch of salt until rough paste forms.

    Heat oil in a large skillet over medium-high until shimmering, about 1 minute.

    Pan-fry chicken 4 minutes per side until golden brown and cooked through, no longer pink inside.

    Transfer chicken to a plate, smash with the back of a spoon, and spread chili-garlic paste over the top.

    Squeeze lime juice over chicken and sambal. Serve alongside steamed rice, fried tempeh, fried tofu, and cucumber slices.
