Ingredients

  • 1.5 lb beef short ribs (asado de tira), 2–3 inches wide
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp olive oil
  • 2 cloves garlic cloves, minced
  • 2 tbsp fresh parsley, chopped (optional)

Instructions

    Pat ribs dry with paper towels. Season both sides generously with salt and pepper.

    Heat olive oil in a 12-inch cast-iron skillet over medium-high until smoking slightly, about 60 seconds.

    Sear ribs 3–4 minutes per side without moving—edges should be deeply browned and crispy.

    Scatter minced garlic over the ribs. Transfer the skillet to a preheated broiler.
