Ingredients
- 1 cup all-purpose flour
- 1 cup milk
- 2 large eggs
- ½ teaspoon salt
- 2 tablespoons butter
- 4 slices ham slices
- 2 medium kiwi
- 1 cup grapes
Instructions
- 1
In a blender, combine 1 cup flour, 1 cup milk, 2 eggs, and 1/2 teaspoon salt. Blend until smooth, about 30 seconds. Let the batter rest for 10 minutes.
- 2
Melt 1 tablespoon butter in a 9-inch nonstick skillet over medium heat. Pour in 1/4 cup batter, tilting the pan to coat the bottom evenly. Cook until the edges lift and the bottom is golden, about 2 minutes.
- 3
Flip the crepe and cook for another 1 minute until lightly spotted. Transfer to a plate. Repeat with the remaining batter, adding more butter as needed, to make 4 crepes.
- 4
Lay one crepe on a cutting board. Place 1 slice of ham on top, then arrange a few slices of kiwi and a few halved grapes in a line down the center.
- 5
Roll the crepe tightly around the filling. Slice the roll crosswise into 1-inch pieces. Repeat with the remaining crepes and fruit. Serve immediately.
- 6
If you like, dust with powdered sugar or drizzle with honey for extra sweetness.
