Ingredients

  • 2 large eggs
  • ¼ cup whole milk
  • ½ tsp vanilla extract
  • 4 slices brioche or challah, sliced 1 inch thick
  • 2 tbsp butter
  • 3 tbsp sugar, divided

Instructions

    Whisk eggs, milk, vanilla, and 1 tbsp sugar in a shallow bowl until smooth.

    Soak each bread slice 2 seconds per side in the custard mixture; don't oversoak.

    Heat butter in a 12-inch skillet over medium-high until foamy, ~1 minute.

    Cook bread slices 3 minutes per side without moving until golden brown.

    Transfer toast to a plate. Sprinkle 1 tsp sugar over each slice.

    Using a kitchen torch, melt and caramelize the sugar until amber and crackly.
