Ingredients

  • 8 oz Italian sausage, casings removed
  • 8 oz mushrooms, sliced
  • 8 oz penne
  • ¾ cup heavy cream
  • ½ cup parmesan cheese, grated
  • 2 tbsp fresh parsley, chopped

Instructions

    Boil penne in salted water until al dente, ~9 minutes. Reserve 1 cup pasta water, then drain.

    Brown sausage in a large skillet over medium-high, breaking it up as it cooks, about 5 minutes.

    Add mushrooms and sauté until golden and liquid evaporates, about 4 minutes.

    Pour in cream and stir, scraping up any browned bits from the bottom of the skillet.

    Add cooked penne and parmesan; toss until sauce clings to pasta. Add pasta water if needed.

    Finish with fresh parsley. Serve immediately.
