Ingredients
- 4 pieces (about 1.5 lbs) chicken thighs, boneless and skin-on
- 3 tbsp Dijon mustard
- ¾ cup heavy cream
- ½ cup dry white wine
- 1 medium shallot, minced
- 3 sprigs fresh thyme sprigs
- 12 oz frozen french fries

Start the fries in the oven or air fryer per package directions so they'll be ready when the chicken finishes.

Pat the chicken dry and season with salt and pepper on both sides.

Heat oil in a large skillet over medium-high until it shimmers. Sear chicken skin-side down without moving for 6 minutes until golden.

Flip chicken and sear the other side for 4 minutes. Transfer to a plate.

Add shallot to the same skillet and cook for 1 minute until fragrant, then pour in white wine and scrape up browned bits.

Whisk in mustard and cream, add thyme, and return chicken to the skillet. Simmer gently for 8 minutes until chicken is cooked through.
