Ingredients

  • 6 slices bacon, sliced
  • 1.25 lb chicken breast, cut into bite-sized pieces
  • 12 oz penne pasta
  • ¾ cup sour cream
  • 1 packet (1 oz) ranch seasoning mix
  • 3 cups fresh spinach, chopped
  • ½ cup parmesan cheese, grated

Instructions

    Boil penne in salted water until al dente, about 10 minutes. Reserve 1 cup pasta water, then drain.

    Cook bacon in a large skillet over medium-high until crispy, 5–6 minutes. Transfer to a paper towel; crumble when cool.

    Add chicken to the same skillet with bacon fat. Cook, stirring occasionally, until no pink remains, about 8 minutes.

    Stir sour cream, ranch seasoning, and 0.5 cup reserved pasta water into the chicken until smooth.

    Add cooked pasta, spinach, and bacon. Toss over low heat for 2 minutes until spinach wilts and pasta coats evenly.

    Finish with parmesan. Add more pasta water if the sauce is too thick. Serve hot.
