Ingredients

  • 2 cups rotisserie chicken, shredded
  • 6 slices bacon, chopped
  • 12 oz penne or rotini pasta
  • ¾ cup sour cream
  • 1 packet (1 oz) ranch seasoning mix
  • 1 cup frozen peas
  • ½ cup parmesan cheese, grated

Instructions

  1. 1

Cook bacon in a large skillet over medium-high heat until crispy, about 6 minutes. Transfer to a plate, chop, and set aside.

  2. 2

Boil penne in salted water until al dente, about 10 minutes. Drain and set aside, reserving 1 cup pasta water.

  3. 3

In the same skillet, whisk together sour cream, ranch seasoning, and 0.5 cup pasta water over medium heat until smooth, about 1 minute.

  4. 4

Stir in shredded chicken, peas, cooked pasta, and bacon. Toss until coated, adding more pasta water if the sauce is too thick, about 2 minutes.

  5. 5

Remove from heat. Fold in parmesan cheese and taste for salt and pepper. Serve hot.
