Ingredients
- 4 cups mixed vegetables
- 2 cups chicken broth
- 1 cup heavy cream
- 4 slices bacon
- 2 stalks green onions
- ½ teaspoon salt

In a large pot, combine the 4 cups mixed vegetables and 2 cups chicken broth. Bring to a boil over high heat, then reduce to medium and simmer until vegetables are tender, about 10 minutes.

While the soup simmers, cook the 4 slices bacon in a skillet over medium heat until crispy, about 5 minutes. Remove bacon, crumble, and set aside. Reserve 1 tablespoon of the bacon fat.

Using an immersion blender, puree the soup until smooth. Stir in the 1 cup heavy cream and 0.5 teaspoon salt. Simmer gently for 2 minutes until heated through, but do not boil.
