Ingredients
- 1 whole (about 1 lb) crab
- 1 lb chicken thighs
- 1 medium onion
- 3 tbsp soy sauce
- 1 cup chicken broth
- 2 tbsp vegetable oil

Cut the 1 lb chicken thighs into 2-inch pieces and the 1 medium onion into wedges. Clean the 1 whole crab, remove the top shell, and cut the body into quarters.

Heat the 2 tbsp vegetable oil in a clay pot or heavy pot over medium-high. Add the chicken and onion, and cook until the chicken is browned on all sides, about 5 minutes.

Add the crab pieces, 3 tbsp soy sauce, and 1 cup chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer until the crab is cooked through and the chicken is tender, about 10 minutes.

Uncover and simmer for 2-3 minutes more, until the sauce thickens slightly. Serve hot, straight from the pot.
