Ingredients
- 1.5 cups couscous
- 1.5 cups water
- 3 tbsp olive oil
- 1 lb beef stew meat
- 2 medium zucchini
- 2 medium potatoes
- 1 can (15 oz) chickpeas
- 1 can (15 oz) black beans

In a medium pot, bring 1.5 cups water and 1 tbsp olive oil to a boil. Stir in 1.5 cups couscous, cover, and remove from heat. Let sit for 5 minutes, then fluff with a fork.

Season 1 lb beef stew meat with salt and pepper. Heat 2 tbsp olive oil in a large skillet over medium-high heat. Add the meat and cook until browned on all sides, about 8 minutes.

While the meat browns, chop 2 medium zucchini and 2 medium potatoes into 1-inch cubes. Add them to the skillet with the meat, reduce heat to medium, and cook until the potatoes are tender and the zucchini is soft, about 15 minutes.

Drain and rinse 1 can chickpeas and 1 can black beans. Add them to the skillet along with 1/2 cup water. Stir and cook until everything is heated through, about 5 minutes.

Serve the meat and vegetable mixture over the couscous. Top with a handful of fresh spinach and a few olives if you like.
