Couscous with Lamb

Ingredients
- 1.5 lb lamb stew meat
- 1.5 cup couscous
- 3 medium carrots
- 2 medium zucchini
- 1 large onion
- 2 stalks celery
- 2 medium tomatoes
- 1 can (15 oz) chickpeas

Heat 2 tbsp olive oil in a large pot over medium-high. Add 1.5 lb lamb chunks and brown on all sides, about 8 minutes. Remove lamb and set aside.

In the same pot, add 1 sliced onion, 2 chopped celery stalks, and 3 sliced carrots. Cook until softened, about 5 minutes.

Add 2 chopped tomatoes and 1 can drained chickpeas. Stir and cook for 2 minutes.

Return lamb to the pot. Add 4 cups water, bring to a boil, then reduce heat to low. Cover and simmer until lamb is tender, about 1 hour.

Add 2 sliced zucchini and cook for 10 more minutes, until zucchini is tender but not mushy. Season with salt and pepper.

Meanwhile, prepare couscous: bring 1.5 cups water to a boil, stir in 1.5 cups couscous, cover, and let sit off heat for 5 minutes. Fluff with a fork.

Serve the lamb and vegetables over the couscous, spooning extra broth over the top.
