Ingredients
- 1 cup masa harina
- ¼ cup all-purpose flour
- 1 cup water
- ½ teaspoon salt
- 3 tablespoons vegetable oil

In a large bowl, whisk together the 1 cup masa harina, 1/4 cup flour, and 1/2 tsp salt. Gradually pour in 1 cup warm water, stirring until a soft dough forms.

Knead the dough in the bowl for 2 minutes until smooth; it should be pliable and not sticky. If too dry, add water 1 tbsp at a time; if too wet, add a little flour.

Divide the dough into 8 equal balls. Flatten each ball between your palms into a 1/2-inch thick patty, about 3 inches wide.

Heat 3 tbsp vegetable oil in a large skillet over medium heat. When the oil shimmers, add the patties in a single layer, working in batches if needed.

Cook until the bottoms are golden brown and crisp, about 4 minutes. Flip and cook the other side until golden, another 4 minutes. Drain on paper towels and serve warm.
