Condensed Milk Rabri

Rabri is a luscious Indian milk pudding made by reducing milk until it's thick and caramel-sweet. This shortcut version uses sweetened condensed milk to skip the 60-minute simmer, finishing with cardamom and pistachios for that traditional spiced-and-nutty vibe.

Ingredients

  • 2 cups whole milk
  • ¾ cup sweetened condensed milk
  • 4 whole cardamom pods, crushed
  • 8 whole saffron strands
  • ¼ cup pistachios, chopped
  • ¼ cup almonds, sliced
  • 1 tbsp ghee

Instructions

    Heat ghee in a heavy saucepan over medium. Add crushed cardamom pods and toast for 30 seconds until fragrant.

    Pour in whole milk and bring to a gentle simmer, stirring occasionally, for 5 minutes to reduce slightly.

    Stir in sweetened condensed milk until smooth and fully combined, then reduce heat to medium-low.

    Crumble saffron strands directly into the milk and simmer, stirring gently, for 4 minutes until it thickens to a pudding-like consistency.

    Pour into serving bowls or cups and let cool for 2 minutes until warm but not piping hot.
