- 1 lb conch meat
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1 large egg
- ½ cup milk
- ½ medium onion
- 2 stalks scallions
- 2 cups vegetable oil

Tenderize the 1 lb conch by pounding it with a mallet until thin, then finely chop it into small pieces.

Beat the 1 egg and 0.5 cup milk into the flour mixture until just combined; the batter should be lumpy.

Fold in the chopped conch, 0.5 diced onion, and 2 sliced scallions until evenly distributed.

Heat the 2 cups vegetable oil in a deep skillet over medium-high until a drop of batter sizzles immediately, about 350°F.
