Ingredients
- ¾ lb beef sirloin or ribeye, thinly sliced
- 3 cups cooked jasmine rice, cooled (3-4 cups)
- 1 large onion, diced
- 4 clove garlic, minced
- 2 tbsp fish sauce
- 1 tbsp soy sauce
- 3 tbsp olive oil
- ⅓ cup fresh cilantro and scallions, chopped
- 1 pinch salt and black pepper to taste

Pat beef dry with paper towels. Season with salt and black pepper.

Break up any clumps in the cooked rice with your fingers.

Heat 1.5 tbsp oil in a large skillet over medium-high until it shimmers.

Sear beef in a single layer without stirring, 60 seconds per side. Transfer to a plate.

Add remaining 1.5 tbsp oil to the skillet. Add diced onion and cook until edges soften, ~3 minutes.

Add minced garlic and stir constantly for 30 seconds until fragrant.

Add cooled rice and break up clumps while stir-frying for 3-4 minutes.

Pour fish sauce and soy sauce over the rice. Stir constantly for 1 minute until evenly coated.
