Ingredients
- 1 lb ground beef
- 3 cups cooked jasmine rice, cold
- 3 tbsp fish sauce
- 3 cloves garlic, minced
- 2 medium shallots, sliced thin
- 2 large eggs
- 2 stalks green onions, chopped
- 1 tbsp soy sauce
- 3 tbsp vegetable oil

Heat 1 tbsp oil in a wok or large skillet over medium-high until shimmering, ~60 seconds.

Add ground beef, breaking apart with a spoon. Cook until no pink remains, ~6 minutes, stirring often.

Drain excess fat if needed. Stir in garlic and cook until fragrant, 30 seconds.

Pour in fish sauce and soy sauce. Stir to combine. Remove beef to a plate.

Add remaining 2 tbsp oil to the skillet. Add shallots and cook until golden, ~3 minutes.

Add cold rice, breaking apart lumps. Stir-fry over high heat until heated through, ~4 minutes.

Push rice to the side. Crack eggs into the empty space, scramble until set, then mix into rice.
