Ingredients

  • 1 lb ground beef
  • 3 cups cooked jasmine rice, cold
  • 3 tbsp fish sauce
  • 3 cloves garlic, minced
  • 2 medium shallots, sliced thin
  • 2 large eggs
  • 2 stalks green onions, chopped
  • 1 tbsp soy sauce
  • 3 tbsp vegetable oil

Instructions

    Heat 1 tbsp oil in a wok or large skillet over medium-high until shimmering, ~60 seconds.

    Add ground beef, breaking apart with a spoon. Cook until no pink remains, ~6 minutes, stirring often.

    Drain excess fat if needed. Stir in garlic and cook until fragrant, 30 seconds.

    Pour in fish sauce and soy sauce. Stir to combine. Remove beef to a plate.

    Add remaining 2 tbsp oil to the skillet. Add shallots and cook until golden, ~3 minutes.

    Add cold rice, breaking apart lumps. Stir-fry over high heat until heated through, ~4 minutes.

    Push rice to the side. Crack eggs into the empty space, scramble until set, then mix into rice.

    Return beef to the skillet. Toss everything together until combined, ~1 minute.

    Remove from heat. Sprinkle green onions on top. Serve hot.
