Ingredients
- 1.5 lb cod fillets
- 1.5 lb potatoes
- 2 medium onions
- 3 medium tomatoes
- ¼ cup olive oil
- 2 sprigs fresh rosemary
- 1 tsp salt
- ½ tsp black pepper

Preheat oven to 400°F. Slice 1.5 lb potatoes into 1/4-inch rounds and 2 onions into thin half-moons.

In a large oven-safe skillet, heat 2 tbsp olive oil over medium. Add onions and cook until soft and golden, about 8 minutes.

Add potatoes and 1/2 tsp salt, toss to coat. Pour in 1/4 cup water, cover, and cook until potatoes are just tender, about 10 minutes.

Slice 3 tomatoes into rounds. Arrange them over the potatoes, then lay 1.5 lb cod fillets on top.

Drizzle with remaining 2 tbsp olive oil, sprinkle with 1/2 tsp salt and 1/2 tsp pepper, and lay 2 rosemary sprigs over the fish.

Bake uncovered until fish flakes easily and potatoes are fully tender, about 15-20 minutes. Let rest 5 minutes before serving.
