Cod with Garlic Sauce

Ingredients

  • 4 filets cod fillet
  • 4 cloves garlic
  • ½ cup greek yogurt
  • 1 whole lemon
  • 4 cups mixed greens
  • 3 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper

Instructions

    Pat the 4 cod fillets dry with paper towels and season both sides with 1 tsp salt and 0.5 tsp black pepper.

    Heat 2 tbsp olive oil in a large skillet over medium-high heat. Place the cod in the skillet and cook until golden and opaque, about 4 minutes per side. Remove to a plate.

    Reduce heat to low. Add 1 tbsp olive oil and 4 minced garlic cloves to the skillet; cook until fragrant, about 1 minute.

    Stir in 0.5 cup Greek yogurt and the juice of half the lemon. Cook, stirring, until the sauce is warm and smooth, about 2 minutes. Season with salt to taste.

    Toss the 4 cups mixed greens with the juice of the remaining lemon half and a drizzle of olive oil. Serve the cod with the garlic sauce spooned over, alongside the salad and lemon wedges.
