Ingredients
- 1 lb cod fillet
- 1 large potato
- 1 egg
- ½ cup all-purpose flour
- 1 cup breadcrumbs
- 2 cups vegetable oil
- 1 tsp salt
- ½ tsp black pepper

Boil the 1 large potato in salted water until fork-tender, about 20 minutes. Drain and let cool slightly.

Poach the 1 lb cod in simmering water for 5-7 minutes until it flakes easily. Drain, cool, and flake into a bowl.

Mash the potato and mix with the flaked cod, 1 egg, 0.5 cup flour, 1 tsp salt, and 0.5 tsp pepper until well combined.

Shape the mixture into 12 small patties or balls. Roll each in 1 cup breadcrumbs to coat evenly.

Heat 2 cups vegetable oil in a deep pan to 350°F. Fry the fritters in batches without crowding, turning occasionally, until golden brown and crispy, about 3-4 minutes per batch.
