- 1 cup sweetened shredded coconut
- ½ cup panko breadcrumbs
- ½ cup all-purpose flour
- 2 large eggs
- 1 lb frozen french fries
- ½ medium red onion
- 1 whole lime

Preheat oven to 425°F. Spread the 1 lb frozen fries on a baking sheet and bake until golden and crispy, about 20-25 minutes, shaking halfway.

While fries bake, set up three shallow bowls: one with 0.5 cup flour, one with 2 beaten eggs, and one with 1 cup coconut and 0.5 cup panko mixed together.

Pat the 1 lb shrimp dry. Dip each shrimp in flour, then egg, then coconut mixture, pressing gently to coat. Place on a plate.

Heat 0.5 inch of oil in a large skillet over medium-high heat. Fry shrimp in batches, not crowding the pan, until golden brown and cooked through, about 2-3 minutes per side.
