- 8 cups fresh spinach
- ½ cup plain Greek yogurt
- 1 whole lemon
- 2 tbsp fresh dill
- 3 cloves garlic
- 3 tbsp olive oil
- 1 tsp salt

Preheat oven to 400°F. Line a baking sheet with parchment paper.

Pat the 4 salmon fillets dry and season both sides with 1/2 tsp salt.

Place salmon on the baking sheet, skin-side down. Bake until opaque and flaky, about 12-15 minutes.

While salmon bakes, make the sauce: in a small bowl, mix 1/2 cup Greek yogurt, juice of 1 lemon, 2 tbsp chopped dill, and 1 minced garlic clove. Season with a pinch of salt.
