Ingredients

  • 4 filets salmon fillets
  • 8 cups fresh spinach
  • ½ cup plain Greek yogurt
  • 1 whole lemon
  • 2 tbsp fresh dill
  • 3 cloves garlic
  • 3 tbsp olive oil
  • 1 tsp salt

    Preheat oven to 400°F. Line a baking sheet with parchment paper.

    Pat the 4 salmon fillets dry and season both sides with 1/2 tsp salt.

    Place salmon on the baking sheet, skin-side down. Bake until opaque and flaky, about 12-15 minutes.

    While salmon bakes, make the sauce: in a small bowl, mix 1/2 cup Greek yogurt, juice of 1 lemon, 2 tbsp chopped dill, and 1 minced garlic clove. Season with a pinch of salt.

    In a large skillet, heat 2 tbsp olive oil over medium. Add 2 sliced garlic cloves and cook until fragrant, about 1 minute.

    Add 8 cups spinach in batches, tossing until wilted, about 3-4 minutes. Season with remaining 1/2 tsp salt.

    Divide spinach among plates, top with salmon, and drizzle with the yogurt sauce.

    For a crispy garnish, fry extra sliced garlic in 1 tbsp olive oil until golden, about 2 minutes, and sprinkle over the top.
