Ingredients
- 1 lb ground beef
- 1 can (13.5 oz) coconut milk
- ½ cup unsweetened shredded coconut
- ½ medium onion
- 2 cloves garlic
- ½ tsp salt

In a bowl, mix 1 lb ground beef, 1/4 cup shredded coconut, 1/2 finely chopped onion, 2 minced garlic cloves, and 1/2 tsp salt. Form into 12 small meatballs.

Heat a large skillet over medium-high heat. Add the meatballs and cook until browned on all sides, about 5 minutes. They will not be cooked through yet.

Pour in 1 can coconut milk and scrape up any browned bits. Bring to a simmer, then reduce heat to medium-low. Cover and cook until meatballs are cooked through, about 10 minutes.

Stir in the remaining 1/4 cup shredded coconut. Simmer uncovered for 2 minutes until sauce thickens slightly. Serve hot, spooning extra sauce over the meatballs.
