Ingredients

  • 3 large eggs
  • ¼ cup sugar
  • ½ cup taro
  • ½ cup pumpkin puree
  • ¼ tsp salt

    In a bowl, whisk together the 1.5 cups coconut milk, 3 eggs, 0.25 cup sugar, and 0.25 tsp salt until smooth. Set aside.

    Steam the 0.5 cup taro cubes over boiling water until fork-tender, about 10 minutes. Mash lightly with a fork, leaving some chunks.

    Pour the custard mixture into a heatproof dish. Gently spoon the mashed taro and 0.5 cup pumpkin puree on top in dollops.
