Ingredients
- 4 slices bread slices
- 2 large eggs
- ½ cup milk
- ½ cup shredded coconut
- 1.5 cups mixed fresh fruit (kiwi, strawberries, blueberries, banana)
- 2 tbsp honey

In a shallow bowl, whisk the 2 eggs and 1/2 cup milk until combined. Place the 1/2 cup shredded coconut on a plate.

Dip each of the 4 bread slices into the egg mixture, coating both sides, then press into the coconut to cover both sides.

Heat a large nonstick skillet over medium heat. Cook the coated bread slices for 2-3 minutes per side, until golden brown and crisp on the outside.

Top the French toast with the 1.5 cups mixed fruit, sprinkle with almonds if desired, and drizzle with the 2 tbsp honey. Serve warm.
