Ingredients

  • 1 cup jasmine rice
  • 8 cups vegetable broth
  • 2 cups water
  • 2 tablespoons fresh ginger, sliced
  • 1 teaspoon salt
  • ½ teaspoon white pepper
  • ½ cup scallions, thinly sliced
  • ¼ cup crispy fried shallots
  • ¼ cup fresh cilantro, chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • ½ tablespoon chili oil

Instructions

    Rinse jasmine rice under cold water until water runs clear, then drain well.

    Peel and slice fresh ginger into thin coins.

    Bring vegetable broth and water to a boil in a large pot.

    Add rinsed rice and ginger slices, stir well, and return to a boil.

    Reduce heat to low and simmer uncovered for 30-40 minutes, stirring occasionally, until rice breaks down and porridge reaches desired consistency.

    Season with salt and white pepper to taste.

    Ladle congee into bowls and drizzle with sesame oil and chili oil.
